In some tropical countries green mango is sliced into bite size pieces and eaten with Bago-ong (a shrimp paste), or Salt & Sugar Mix (mix 40%salt & 60%sugar), and still, others pickle it in salty, sweety, vinegary water and add hot green peppers. I would like to hear different variations from other readers.

I just ate one green mango, peeled and sliced into Paul Bragg’s soy sauce substitute YUM, I added a little bit of water and some black pepper to it. Its tastier than with plain soy sauce, which most people he4re in the Marianas Islands in Micronesia, in the North Western Pacific, like to eat them with..
Some soak them in Kim chi base, but that comes with MSG in it . Others soak mangos in cool aid and kim chi base or sprinkle in some msg.
Others who don’t have that on had will dip them in vinegar and salt along with hard boiled eggs.
I sometimes peel green mangos and cook them with brown sugar or honey, then add some cinnamon and use it as a pie filling instead of using green apples, which don’t grow here in the tropics.

Green Mango shake, mixed with simple syrup and crushed ice is an awesome drink! May want to trim the rim of the glass with some salt for added contrast :)
