Lupini Beans are a legume that grow all over Europe and is a common snack food in Portugal, Spain, France, Italy, Greece, and Egypt. Lupini Beans are full of protein, fiber, and low in oil and starch and because of that weight loss is commonly associated with eating Lupini Beans. They are full of the amino acid arginine which also helps lower blood pressure, lowers cholesterol & trigs, and lowers blood sugar levels. Lupini Beans also act as a pre-biotic thus improving large bowel health. Dried Lupini Beans can be found in super markets in the ethnic food section. They must be soaked over night to get rid of the bitter taste -(discard the water)-then salt and season to taste. You can also buy them already prepared in jars—just slip off the outer covering of the bean and eat to your hearts content. They are a great snack food and become habit forming… believe me I know!
