Health Benefits of Polenta

If you want a good gluten free alternative to wheat then give Polenta a try. Polenta is full of carotenoids that improve your night vision, boost your immune system, and also help your body rebuild cells. Polenta is also good for cardiovascular health and also good for supporting the proper function  of your lungs. Polenta is great for stress and Polenta is corn and corn is full of lots of fiber, carbs, and also B and C vitamins and wonderful minerals. It is also low in fat--other than the butter you add to it. You can make pizza from polenta, use it as a shell for a veggie pie, there is no end to what you can do with Polenta.  I love it sweet with coconut--Wow!
