Here’s a great tasting and beautiful dinner salad that anyone can make at home in minutes… and it’s looks great and will do your body good. Wonderful for parties too!
Full of lots of antioxidants and nutrients that are very healing.
10 – Small Japanese Eggplant – Grilled with Old Bay Seasoning (low sodium) and Garlic Powder
2 – Large Tomatoes – Chopped and Seasoned with Just a Touch of Salt and Sweet Rice Wine Vinegar.
2 – Red Bell Peppers – Chopped and sprayed with just a touch of canola oil (just enough to make the seasoning stick) and seasoned with Salt Free Italian Seasoning
1 – Large Cucumber – Chopped
3 – Large Gluten Free – Whole Grain Crackers Crushed
1 – Cup of Almonds – Crushed
2 – Cups of Sunflower Sprouts – Used in the green mix base for the salad
6 – Cups of Mixed Greens – Use any kind that you like for the base for the salad
Season with a small amount of salt and pepper
And because this salad tastes great without dressing… just add a little sweet rice wine vinegar for the dressing. – You’ll Love It!
Arrange sprouts and green mix in a large bowl, then add your grilled eggplant in the middle and the rest of the ingredients around the eggplant. – Simple
You can make this salad very large for a party or small for one person.
