Whole Foods/Plant Based – BBQ’ed Stuffed Portobello Mushrooms

This wonderful tasting treat gives you lots of energy and it’s full of nutrition, it’s quick and simple to put together… and your friends will love it!

BBQ’d Stuffed Portobello-Mushroom

Ingredients:

4 – Large Portobello Mushrooms

1 –  10 oz Package of Mexican Seasoned Veggie Protein Crumbles… or you could use cooked Mexican Seasoned Brown Rice.

1 – Red Bell Pepper – Chopped

1 – Cup of Greens of Your Choice – Bok Choy, Turnip Greens, Dandelion Greens, etc. – Chopped.

2 – Tablespoons of No Salt Chili Powder

4 – Cloves of Garlic – Minced

Spray Oil – Just enough to cover mushrooms – use very little.

Take the mushrooms and spray them sparingly with olive oil or any other cooking oil, use very little, the oil is just to keep the mushroom from drying out on the grill.

Now take the Mexican Veggie Crumbles and add the chili powder, minced garlic, chopped red bell pepper, and your chopped greens – mix well.

Next take your hands and mound up the crumble mixture into the open Portobello Mushrooms. Make sure to push down lightly so everything stays in place.

Now place on a medium heat BBQ until brown all around.

You could add some Nutritional Yeast granules to the top of you want a cheesy flavor.

There you have it – a quick and easy lunch or dinner that’s great tasting and good for you.

Portobello Mushrooms are low in fat, high in protein, and have very low sodium. They also contain lots of l-erothioneine which is a very powerful antioxidant and polyphenols like that found in green tea that help protect you from cardiovascular disease, strokes, and cancer. And studies show that eating Portobello Mushrooms reduces the possibility of coming down with Alzheimer’s disease.
