Whole Foods/Plant Based Grilled Veggie Sandwich – Full of Nutrition

Here is a great tasting sandwich that’s quick and simple… and full of wonderful nutrition with lots of great tasting grilled vegetables and nutritional yeast.


2 – Large Eggplant – Sliced Lengthwise

4 – Large Portobello Mushroom

2 – Large Red Bell Peppers – Take the ends off the pepper and open up for grilling.

1/2 Cup –  Nutritional Yeast to Sprinkle on the Veggies

1 Tablespoon – No Salt Seasoning of Your Choice – Italian, Cajun, Madras Curry Seasoning, etc.

4 – Large Butter Lettuce Leaves

4 – Large Whole Grain/Gluten Free Hamburger Buns

Oil for Spraying Veggies so Seasoning Sticks – Use Very Little.

Salt and Pepper to Taste – Use the Least Amount of Salt Possible.

Condiments – Mustard and other condiments.

Start by getting your grill hot and then spray your veggies with the least amount of vegetable oil possible, and then shake on your seasoning of choice. Now put them on the grill, and grill until you get grill marks… and the mushrooms are soft. Now shake on enough nutritional yeast to cover all the veggies and leave on the grill for another 2 or 3 minutes.

Next grill your Hamburger Buns slightly.

Then put it all together with Lettuce, Buns, and the condiments of your choice and you have a great tasting lunch or dinner.

And the left over veggies keep well in the frig for later in the week.

Eggplant contain Nasunin which is a powerful antioxidant that removes free radicals from your system and thus helps to slow the aging process. Eggplant also contain phenolic acids that prevent cancer… plus eggplant lowers cholesterol and helps to prevent arthritis and other diseases.

Red bell peppers are full of Vitamin C which prevent cancer, flues, and colds. They also contain capsaicin which lowers cholesterol and blood sugar and helps with inflammation and pain. Plus they boost your immune system, and help your skin stay young looking.

Portobello Mushrooms are low in fat, high in protein, and have very low sodium. They also contain lots of l-erothioneine which is a very powerful antioxidant and polyphenols like that found in green tea that help protect you from cardiovascular disease, strokes, and cancer. And studies show that eating Portobello Mushrooms reduces the possibility of coming down with Alzheimer’s disease.

Plus Nutritional Yeast has over 13 grams of protein per oz (high protein), and with very few calories – lower than 80 calories per oz. Just a couple of tablespoons has more protein than you find in 6 grams of beef, 1 egg, and even 1 cup of milk. – Wow! So if you work out hard and want some great protein in your diet, add some Nutritional Yeast to your workout smoothie.
