Curried Spinach Casserole – Whole Foods/Plant Based Recipe – Vegan

Here is a great recipe with wonderful flavor… this dish will pick you up and make you healthy!

So quick and simple, it can be put together in 20 minutes.

6 to 8 – Veggie Burgers – These can be store bought – or you can used my Bubba Burgers

8 to 10 – Cups of Leaf Spinach – Washed, Cleaned, and Ready to Use

5 – Cups of Extra Firm Tofu, or Cooked Mashed Potatoes, or Cooked Brown Rice – All None GMO

1/2 – Cup of No Salt Curry Powder

2 – Tablespoons of Cumin Powder

6 – Garlic Cloves – Minced

2 – Large Tomatoes Sliced

1 – Cup of Nutritional Yeast

Optional – 1/2 – Teaspoon of Red Pepper Flakes if you want some spice

Salt and Pepper to Taste

Small amount of None GMO Spray Oil

Take a 9 x 14 inch pan and line the bottom with store bought veggie burgers. Place them in a single layer on the bottom of the pan, if you have to break them up to cover the whole bottom of the pan.

Now take all the washed spinach leaves and place them on top the veggie burgers, it will seem like a lot of spinach but it cooks down – don’t worry. Take the Tofu or Mashed Potatoes, or Cooked Brown Rice and add the curry powder, cumin powder, and minced garlic and mix well… and then add this as a complete layer over the spinach.

Now sprinkle with a little salt and pepper for extra flavor. Next add tomato slices and sprinkle on Nutritional Yeast, then add red pepper flakes and spray the whole top of the casserole with a little oil so it browns.

Bake in a preheated 400 degree oven for 60 minutes or until golden brown.

Let cool and slice – Can also be frozen for later use.

The main ingredient in curry powder is Turmeric grows in the tropics and has been used in India for over 2000 years. When cooked with cauliflower Turmeric has been shown to prevent cancer of the prostate and even stop the growth of tumors, and studies show that Turmeric stops the spread of cancer in lungs of mice. Turmeric has been show to reduce the risk of Childhood Leukemia and also prevent colon cancer… and new studies are being done on pancreatic cancer and Turmeric.

Turmeric is a great detoxifying agent for the whole body and especially the liver… and studies show that Turmeric is beneficial in the treatment and prevention of Alzheimer’s disease.

Greens like spinach contain lots of anti-inflammatory agents too thus helping with arthritis, and other inflammatory disease processes and cardiovascular disease. Greens help in preventing homocysteine build up, which is very important for preventing cardiovascular disease. Greens are full of Vitamins A, B’s, C, E, and K and wonderful trace minerals and antioxidants that keep the body healthy. And Greens help detox your cells of all those nasty toxins we have in the environment.

Tomatoes also contain lots of lycopene that’s a powerful antioxidant that’s well known to prevent Breast, Prostate, and Stomach Cancer and boost your immune system. Studies show that eating tomatoes lowers your risk of prostate cancer by more than 30%. And another study shows that eating tomatoes lowered your chances of coming down with pancreatic cancer by over 40%. And low levels of lycopene have been found in people who come down with colon cancer and growths… so it’s very important to eat your tomatoes.

Nutritional Yeast is one of the best sources of B vitamins including B12 which is important if you are a vegan. Plus Nutritional Yeast has over 13 grams of protein per oz (high protein), and with very few calories – lower than 80 calories per oz. Just a couple of tablespoons has more protein than you find in 6 grams of beef, 1 egg, and even 1 cup of milk. – Wow! So if you work out hard and want some great protein in your diet, add some Nutritional Yeast to your workout smoothie. Nutritional Yeast has over 18 different amino acids — “a complete source of amino acids” that will do your body good. Nutritional Yeast is over 50% complete protein which is amazing!
