Berry and Banana Cobbler Recipe – Vegan and Wheat Free

This great tasting, fast recipe for a Whole Foods Plant Based Cobbler is out of this world! You will love it! It takes about 30 minute to put together and pop in the oven. And you will have more batter left over for future creations.

Vegan, Wheat Free, Berry and Banana Cobbler

The biggest issue in vegan baking is not using eggs, and I have found a great way to get around that, I uses Xanthene Gum Powder – just a little creates a nice batter. Xanthene Gum Powder is natural, it’s made from dead cells of particular type of bacteria and those tiny cells thicken sauces and batters… takes very little thicken anything.

I’m also using Coconut Flour which is very high in fiber and does the body good. – Gluten Free

Ingredients:

3 – Cups of Organic Coconut Flour

12 – Cups of Water

1 1/2 – Cups of Organic Agave Nectar – Which has a low glycemic index – great for blood sugar.

4 – Tablespoons of Vanilla Extract

2 – Teaspoons of Xanthene Gum Powder

2 – Cups of any kind of Organic Fresh Berries or you can use frozen

1 – Cup of Organic Banana Slices – and if you want to you can blend up 2 whole bananas with the skin on for lots of powerful nutrients.

Making the Batter – I usually make up a lot of this batter to freeze and have on hand. So put the Organic Coconut Flour into a large pot and add water, cook until it becomes the thickness of a light batter, add 1 cup of the Agave Nectar, the Vanilla and Xanthene Powder. Cook and stir until it creates a thick batter. (This will make a large batch of batter – freeze the rest for later use.)

Take a 9 x 14 inch glass, ceramic, or metal pan and add enough batter to cover the bottom of the pan.

Now layer on your berries, banana slices, and add 1/2 cup of the Agave Nectar.

Now pour on enough batter to cover the fruit. Sprinkle with cinnamon on the top.

Pop in the oven at 425 degrees and bake for 1 hour or until golden brown and bubbling.

Take out of the oven and let cool.

Serve it hot or cold, it tastes great!

It will keep in the frig for a week… and you can freeze it.

Coconut Flour is easy to digest and is gluten free, great for anyone who has a wheat allergy or celiac disease. Also it has more than 50% of your daily needs of fiber (wheat flour has less than 28% fiber), so it provides a great place in your gut for good bacteria to grow and promote probiotic bacteria that boost your immunity.
