“Chocolate Coconut Sweet Potato Brownies – A Vegan Recipe”

This is a very simple… yet very tasty and nutritious sweet treat.

This Whole Foods/Plant Based dessert is wonderful if you like coconut and chocolate.

Chocolate Coconut Sweet Potato Brownie

Again the biggest issue in vegan baking is not using eggs, and I have found a great way to get around that, I uses Xanthene Gum Powder – just a little creates a nice batter. Xanthene Gum Powder is natural, it’s made from dead cells of particular type of bacteria and those tiny cells thicken sauces and batters… takes very little thicken anything.

I’m also using Coconut Flour which is very high in fiber and does the body good. – Gluten Free

 Ingredients:

3 – Cups of Organic Coconut Flour

12 – Cups of Water

3 – Cups of Organic Agave Nectar – Which has a low glycemic index – great for blood sugar.

4 – Tablespoons of Vanilla Extract

2 – Teaspoons of Xanthene Gum Powder

2 – Medium Size Sweet Potatoes Baked and Sliced – You can leave the skin on if you like for more vitamins.

1/2 – Cup of Cocoa Powder or you can use Carob Powder or any other flavor you like.

2 – Cups of Coarsely Shredded Coconut

1 1/2 – Cups of Old Fashioned Oatmeal – None GMO

Making the Batter – I usually make up a lot of this batter to freeze and have on hand. So put the Organic Coconut Flour into a large pot and add water, cook until it becomes the thickness of a light batter, add 1 cup of the Agave Nectar, the Vanilla, Cocoa Powder, and Xanthene Powder. Cook and stir until it creates a thick batter. (This will make a large batch of batter – freeze the rest for later use.)

Take a 9 x 14 inch glass, ceramic, or metal pan and add enough batter to cover the bottom of the pan.

Now layer on 1/2 the shredded coconut, sweet potato slices, 1/2 cup of oatmeal, and add 1/2 cup of the Agave Nectar. Then add on top of that the rest of the shredded coconut and another 1/2 cup of agave nectar and another 1/2 cup of oatmeal.

Now pour on enough batter to cover everything.

Sprinkle a little oatmeal on top.

Pop in the oven at 425 degrees and bake for 1 hour or until golden brown.

Take out of the oven and let cool, then place it in the frig. – these brownie slices better when cold.

It will keep in the frig for a week… and you can freeze it.

Coconut Flour is easy to digest and is gluten free, great for anyone who has a wheat allergy or celiac disease. Also it has more than 50% of your daily needs of fiber (wheat flour has less than 28% fiber), so it provides a great place in your gut for good bacteria to grow and promote probiotic bacteria that boost your immunity.

Coconut Flour also has very few carbs and can help you lose weight and it gives you that full feeling too. Coconut Flour is low in oils, less than 15%, and it contains coconut oil that is good for your body. At the same time Coconut Flour lowers cholesterol and detoxes the body.

Sweet Potatoes are full of B-6 Vitamins which is great for helping reduce inflammation and which also helps reduce arthritis, cardiovascular problems, and also strokes. Sweet Potatoes are also filled with a good amount of iron that helps your blood transport more oxygen and powers up your muscles, boosts your immune system, and also helps with stress. And most people don’t get enough magnesium which helps you feel relaxed and is important in the integrity of your blood vessels, heart, nerves, and your bones.

And potassium is great for anyone with electrolyte problems and irregular heart beats–you will find a lot of potassium in Sweet Potatoes. And you can get Vitamin D from Sweet Potatoes which is great for enhancing your mood and giving you a boost of energy, and building a strong and vital organ system. Sweet Potatoes are full of betacarotene which is a great anti-oxidant that helps with those nasty free radicals… and what I like most about Sweet Potatoes is that they break down into glucose much slower than other starches thus making them great for diabetics. Bake them, mash them, grill them, make long strings out of them with a peeler and make Sweet Potato pasta–it’s great!

Coconut contains Coconut Oil which is a saturated fat that contains a lot of Luric Acid which is good for stress relief, helping maintain good cholesterol levels, power up your immune system, good digestion and metabolism, good for the kidneys, heart diseases, high blood pressure, diabetes, cancer, HIV and also good for hair and skin care. And Coconut oil is believed to be good for treating pancreatitis. It is a good antimicrobial, antioxidant, antifungal, antibacterial oil that helps maintain good health. A feel a little goes a long way and you have to remember that it is high in fat and does have lots of calories so use it in moderation.
