This great tasting Whole Foods/Plant Based recipe is super fast and simple to make, and it will do your body good.
Full of nutrition and lots of flavor… this dish might become one of your favorites.
Ingredients:
2 – Cups Cooked Organic Brown Rice… Cook in Veggie Broth
3 – Cups of Chopped Pumpkin… you can leave the skin on if you like, will not make a difference
2 – Cups of Black Olives
Enough Low Sodium Veggie Broth to add to blender to blend
2 – Cups of Chopped Yellow Bell Pepper
3 – Cups of Chopped Organic Tomatoes
3 – Cloves of Garlic Minced
2 – Tablespoons of any kind of seasoning that you like, spicy old bay, could even be Italian, I am using just garlic here.
Salt and Pepper to Taste – use salt sparingly… but this dish does need some salt
Optional – Sprinkle on Nutritional Yeast on top just before baking.

Take cooked Brown Rice and add chopped raw pumpkin plus seasoning and garlic and add enough veggie broth to make the blender work properly… blend until smooth.
Then add chopped tomatoes, black olives, and yellow pepper and pour into a pan lined with banana leaves or parchment paper.
Bake at 350 degrees until firm with a nice brown crust on top or starts to have little cracks show up.
Remove from oven and let cool.
Cut into portions and serve with tomato wedges and any kind of green garnish you like.

Plus if you are debilitated it’s very easy to digest and contains needed nutrients for your bones, muscles, nails, hair, and teeth. Soak your Brown Rice in water for 30 minutes prior to cooking and it will cook faster.
