This great tasting rice salad will make great dish for the holidays.
It’s easy to make and has a bold flavour that is wonderful and it will keep your nourished and feeling great.
Ingredients:
4 – Cups of Organic Brown Rice – Cooked with Annatto Seed and Low Sodium Veggie Stock – or you can use any other yellow coloured spice like saffron if you like.
2 – Cups of Black Olives – Chopped
2 – Large Organic Tomatos – Chopped
3 – Cups of Organic Wild Mustard Greens – Chopped – Mustard greens can be found at your local framers market or at your local Asian Food Market.
3 – Cups of Fresh Cranberries – Cut in Half
2 – Cups of Organic Celery – Sliced Thin
1/2 – Teaspoon of Red Pepper Flakes – adjust that to your taste.
And Salt and Pepper to Taste – Use Salt Sparingly.
Cook rice, let cool, and add all the rest of the ingredients and mix well.
You can either serve this dish hot or cold, or you could add a nice salad dressing and make it something totally different.
And this salad is great with a honey mustard dressing or an agave nectar and honey dressing.
And it makes a great baked stuffing for the holidays.
Be creative add your own touches to this simple dish and enjoy some wonderful cranberries.
