“Spring Roll Salad – A Vegan Recipe”

Here is a great recipe that’s very simple and easy to make, and really tasty!

Spring Roll Salad

Spring Roll Salad

If you’ve ever had spring rolls and liked them… then you’ll love this recipe.

Ingredients:

Spring Roll Wrappers – They are made of rice and tapioca flour, and come in a couple different sizes, I recommend using the large ones… and all you have to do is dip them in warm water until they are soft and pliable.

Lettuce – 4 organic lettuce leaves

Cucumber – 4 long strips of organic cucumber

Tomato – 4 long strips of organic tomato

Bell Pepper – 4 long strips of orange or red organic bell pepper.

(Optional) Ginger – 6 or 7 organic ginger slices… like they use in sushi.

(Optional) Kimchi – Tablespoon of spicy kimchi

Condiments – Use your favorite salad dressing, or sweet chile sauce, or wasabi, or Asian hot mustard (that’s my favorite) or spring roll dipping sauce, or anything else you like.

Lay down your soft spring roll wrapper and then add your lettuce leaves, cucumber, tomato, bell pepper… plus ginger and or kimchi in the middle if you like.

Next roll up the wrapper with the veggies in the middle… and fold over the ends.

If you like your spring roll wrapper a little thicker, add another spring roll wrapper on top the one you just used… that’s what I do because the wrappers are very thin.

Let the roll set in the frig until it sets up slightly.

Then cut the roll in half.

Serve with condiments of your choice for dipping.

Makes a simple, easy, and fast way to have a salad – wonderful for lunch or dinner.

And it’s very filling.

*You could also add a grilled vegan veggie burger (Or my Bubba Burger) in the middle of this roll… just crumble it up and add it to the middle with your veggies.
