“Singapore Noodles” – A Vegan Recipe

Here is a great recipe that I made for fathers day…

it was such a hit that it disappeared in no time at all.

Singapore Noodles - A Vegan Recipe

Singapore Noodles – A Vegan Recipe

Full of flavor and great nutrition this recipe will do your body good.

Ingredients:

2 – Packages of organic whole grain rice noodles – cooked according to directions. You can also use whole grain buckwheat noodles for this recipe – but make sure they don’t contain wheat.

2 – Cups of finely chopped organic celery.

4 – Bunches of finely chopped organic green onion tops.

1 – Organic red bell pepper – thinly sliced and chopped.

1 – Cup of fresh or dried moringa leaves, remove the stems as best as possible.

1 – Cup of organic carrots – I use a potato peeler to make these carrots very thin… and then chop the long ribbons into short bits.

2 – Tablespoons of curry powder – either mild or hot.

Salt and pepper to taste – (use salt sparingly)

(optional) – Add a teaspoon of wasabi paste for a little more zing.

(optional) – Add a little hoisin sauce if you want more oriental flavor.

(optional) – add some red pepper flakes if you like it spicy.

(optional) – add a little spray organic oil on the noodles to keep them from sticking together, using sparingly.

Mix everything together and there you have it.

Add salt and pepper and you are ready to go.

I make this recipe often at home… we love it!
