“Hearty Organic Plantain Soup – A Vegan Recipe”

Here is one of my favorite soup recipes that only takes 30 minutes,

this soups is thick, creamy, and hearty…

and so simple to make… plus it tastes great.

Great Tasting Organic Plantain Soup

Great Tasting Organic Plantain Soup

Ingredients:

4 – Large green organic plantains – slices into pieces.

1 – Large organic onion – chopped.

6 – Large cloves of organic garlic – chopped.

Organic spray oil of your choice to spray the bottom of the pot.

8 – Cups of organic veggie stock – or enough to cover your veggies.

Salt and pepper to taste.

Take your plantains and with a knife cut through the skin on two sides and then peel and slice them into 2 inch pieces.

Now spray the bottom of your large soup pot with oil and saute’ the onions and garlic.

Then add the sliced plantains and veggie stock and let simmer until the plantains are nice and soft… so you can pierce them with a fork.

Next take an emersion blender and blend everything until creamy… or you can use a regular blender and blend until creamy.

Salt and pepper to taste and there you have it!

A wonderful tasting fall meal.

This soup freezes well, thus you can save it for days you don’t feel like cooking.

This soup will keep in the frig for 5 or 6 days.

This soup will thicken when you put it in the frig… so just add some water to it and your plantain soup will be wonderful again.

This soup is so creamy that you’ll think it has cream in it… but doesn’t.

If you have not tasted plantains give them a try, most markets carry them now or go to your local Asian or Mexican market… they will have them for sure.
