“Quick Mango Pudding Cake – Vegan Recipe”

“Here is a quick and simple vegan pudding cake recipe that will make everyones eyes light up with delight. And the flavor is bright and full of that great mango flavor that everyone loves.”

Mango Pudding


4 – Large Organic Mangos – Meat removed from the seed and peeling. (or 10 to 15 smaller mangos)

1- Cup of Agave Nectar.

2 to 3 – Cups of organic nut milk of your choice…almond, sunflower, or something else. (use just enough nut milk to barely cover the mangos in the blender)

1 1/2 – Cups of organic gluten free biscuit and baking mix –

(Red Mill makes one I like… but lots of people make them)

Optional – add a little lemon zest for brighter flavor. 

Place all the ingredients in a large powerful blender and blend on high until everything is smooth and creamy. Take a round baking dish and spray the inside with a little organic oil so the pudding does not stick to the dish. Pour in the batter and bake at 350 degrees until nice and brown on top… and a toothpick comes out clean. Depending on the oven this could take about 1 hour and 15 minutes or so.

Remove from the oven and let cool completely. The pudding will fall, don’t worry that’s natural. Just slice and it’s ready to eat.—-Yummy! It’s really more of thick pudding than a cake, so don’t expect light and airy, this is thick, gooey, and sweet.

You can add some organic vegan ice cream on top and your favorite organic jam. This can be frozen but be aware that the pudding does become much harder when frozen than the ice cream.

Most of all… this pudding cake is great all by itself, just keep the pudding cake in the frig and cut a slice for yourself now and then. Remember it contains natural sweeteners and all the great goodness of mangos… the hard part is keeping away from the frig after the first bite.
