“Organic Garlic Potato and Carrot Casserole”

Organic Garlic Potato and Carrot Casserole

Ingredients:

7 – Pounds of Organic Potatoes Boiled and Mashed with Garlic.

3 – Full Head of Organic Garlic – Add 2 Heads to the Potatoes as they Boil.

3 – Pounds of Organic Carrots – Chopped and Boiled with 1 Full Head of Garlic.

8 to 10 – Organic Veggie Burgers of Any Kind.

3 – Large Organic Tomatoes – Sliced.

2 – 12 oz packages of any kind of Organic Veggie Cheese

1 – 12 oz Jar of Organic Marinara Sauce — Reserve just a little for the topping.

3 – Tablespoons of Italian Seasoning.

1 – 17 inch Cast Iron Skillet – or Any Large Heavy Skillet

A Little Bit of Organic Spray Oil for the Skillet.

Add – Salt and Pepper to Taste in the Potatoes and Carrots.

Take a large cast iron skillet and spray it with a little organic oil, then take the mashed organic potatoes with garlic and make a nice thin layer of potatoes at the bottom of the pan. Then add the organic garlic carrots in a thick layer, then pour on the marinara sauce… and then add another layer of potatoes.

Potato and Carrot Casserole

After that add a layer of Organic Veggie Burgers to cover the entire top of the dish, then cover with slices of organic tomatoes and spread the Italian seasoning on top of the whole dish.

Then add the veggie cheese on top and spread it out nicely. Now pour on a little of the reserved marinara sauce in the middle of the dish to make a nice looking casserole.

Place in a 400 degree oven for 90 minutes or until the sauce is bubbling on the edges of the pan… and the top is slightly brown.

Let cool and cut into serving slices.

I made this dish for Mothers Day and it was a huge hit with everyone!

And this dish keeps well in the freezer for later use.

Thus carrots help with arthritis, joint pain, swelling, redness, tenderness and are a great natural pain killer.
