Here is a wonderful recipe that’s sure to please and will warm the soul of anyone who’s a little chilly on a cool fall evening. Full of the wonderful goodness of organic avocados with lots of great fats, organic brown rice, organic carrots, and lots of organic garlic… this comfort food recipe is easy to make and will do the body good.
3 – Cups of Cooked Organic Brown Rice
2 – Cups of Cooked Organic Carrots Chopped
1 – Large Organic Onion Chopped
1 – Full Head of Organic Garlic Minced
4 – Medium Size Ripe Organic Avocados Mashed
2 – Cups of Cooked Organic Peas or Pigeon Peas
6 – Organic Veggie Burger Patties of Any Kind
1 – Package of Shredded Organic Vegan Cheese
2 – Cups of Organic Black Olives
2 – Tablespoons of Organic Italian Seasoning
1 – Cube of Organic No Salt Veggie Bouillon
1 – Tablespoon of Garlic Powder
2 – Teaspoons Organic Chili Powder
Spray Organic Olive Oil
Salt and Pepper to Taste
Take a mixing bowl and add the Cooked Rice, Mashed Avocados, Italian Seasoning, Chopped Onion, Chopped and Cooked Carrots, Cooked Peas, Black Olives, Minced Garlic, Bouillon Cube, Garlic Powder, Salt, Pepper, Chili Powder, and mix them all together with a spoon or your hands.
Take a 9×13 inch baking pan and spray it with a little organic olive oil. Next add the mixture to the sprayed pan and garnish with 6 Organic Veggie Burgers and then the Shredded Organic Vegan Cheese on top. Place in 400 degree oven for 1 hour or until the cheese is nice and brown. Then let cool slightly and serve. Makes 12 to 16 large servings, and this great casserole can be place in the freezer for later use.

Brown Rice compared to white rice has a lot of health benefits. Brown Rice is full of Thiamine, Niacin, Pyridoxine, Vitamin K, Calcium, Iron, Phosphorus, and Potassium. Brown Rice is rich in fiber, controls blood sugar and cholesterol, and works wonders for ulcers and diarrhea. Plus if a person is debilitated brown rice is very easy to digest and contains needed nutrients for the growth of bones, muscles, nails, hair, and teeth. Soaking Brown Rice in water for 30 minutes prior to cooking will make it easier to cook. And pressure cooking also preserves more nutrients and cuts the cooking time to about 20 minutes creating fluffy brown rice.
