Here is a wonderful recipe for a wonderful Organic Ice Cream Cake that I make once a year for holiday parties. It’s simple to make and it’s a real crowd pleaser, plus it’s totally cholesterol free and has all the goodness of Almonds, Berries, and Dark Chocolate.
8 – Pints of Organic Almond Ice Cream – This can be found at any health food store— you will need 3 pints of chocolate, 2 pints of vanilla, and 3 pints of mocha
2 – 8 oz packages of Organic Gluten Free Chocolate Chip Cookies – Crushed
1 – 12 oz bar of Organic Bitter Sweet Vegan Chocolate – Finely Shredded
3 – Cups of Organic Frozen Mixed Berries
A little water for mixing topping.
Take a large cooking pot and line the whole thing with plastic wrap or some strong parchment paper. I usually line a deep pot and have lots of extra plastic wrap or parchment paper hanging over the edge. Make sure to use lots of wrap because you don’t want the ice cream to stick to the pot. Push down the wrap to fit the inside of the pot.
Now place half of crushed gluten free chocolate chip cookies at the bottom of the pan on the plastic wrap. And take 3 or more tablespoons of water and make the cookies a bit wet so they stick together. Now spoon down a layer of chocolate ice cream and flatten it out, then take the berries and place them over the chocolate ice cream. Then take the vanilla ice cream and smooth that out over the berries. Next take the mocha ice cream and smooth that out over the berries.
Lastly take the rest of the crushed cookies and shredded bitter sweet chocolate and spread that out over the mocha ice cream. Take some water and moisten the cookies and chocolate so they stick together.
Now take the wrap on the sides of the pot and fold it in over the top of the ice cream cake and place the pot in the freezer overnight until totally frozen.
When just about ready to serve take the ice cream cake out of the freezer and let set for 10 minutes. Then have someone hold down the pot while you take the plastic wrap or parchment paper and lift out the ice cream cake… it will resist but it will come out.
Then slice and serve… and whatever is left over pop back into the freezer for later use.
This dessert will serve 30 or more people depending upon size of the slices served.
I made this for Thanksgiving and it was a huge hit!
Some people wanted a small piece and others wanted a large piece, so cut the slices depending upon exactly what they want.

They also contain lots of plant sterols that lower cholesterol, and they contains lots of great unsaturated fats that again help lower cholesterol. And they also have lots of great fiber for promoting probiotic bacteria in your gut… thus boosting your immune system. Nuts also contain zinc for immune support, magnesium for preventing and reversing osteoporosis, B vitamins for mood enhancement, selenium for preventing shingles , and many more trace minerals… and a good amount of protein too.
Enjoy this great tasting dessert, but remember it still has calories and thus we must keep portions within reason. But there is no reason for not having something wonderful over the holidays or on special occasions. It’s not what we eat once in a while that creates challenges in our life, it’s what we eat day in, and day out. So have a treat today, then have salad tomorrow. Balance is very important, and when we have balance we feel good and life flows in a natural way. And the yin and yang of life keeps happy, healthy, and full of fun.
