“Marinated Yuca Salad With Garlic Stuffed Olives”

Here is a wonderful organic yuca or cassava salad (potatoes can also be used) which if full of great tasting garlic. This salad is easy to make, and can be made ahead of time for dinner with friends, thus nothing has to be done that night. And it’s sure to please everyone and it’s full of great nutrition and it’s very healing.

Marinated Yuca Salad

Marinated Yuca Salad

 

Ingredients:

12 – Cups of Organic Yuca/Cassava Cut into Small Pieces and Cooked Until Tender – (Potatoes Can Also Be Used).

2 1/2 – Cups of Organic Roasted Red Bell Pepper – Cut into Strips

3 – Cups of Organic Garlic Stuffed Green Olives

12 – Cloves of Organic Minced Garlic

2 – Tablespoons of Organic Garlic Powder

1/2 – Cup of Organic Olive Oil

1/3 – Cup of Organic Italian Seasoning

2 – Cups of Organic White Vinegar

2 – Cups of Filtered Water

Just a little bit of sweetener of choice to take the edge off the vinegar – stevia, honey, agave nectar or something else.

Salt and Pepper to Taste

Take the cooked yuca and add the minced garlic, olive oil, roasted red pepper strips, garlic powder, Italian Seasoning, vinegar, water, sweetener, and salt and pepper to taste and lightly mix everything without breaking apart the yuca. And then place into a glass, ceramic, or plastic container and allow to marinade for at least 24 hours in the frig. (I have actually marinaded this salad for up to a week for really great flavor) Then when ready to serve remove the salad from marinading container and pour into a bowl and it’s ready to eat.

Health Benefits of Yuca

Yuca is very common in the tropics… including Florida, Mexico, Central America and South America and Yuca has many health benefits that most people don’t know about.According to a study in the “Journal of Applied Nutrition” Yuca has anti-inflammatory and anti-arthritic properties, thus lowering pain, stiffness, and swelling.

Yuca also works well for Fibromyalgia, and it works well for people with high blood pressure. And studies show that it’s a good antibacterial agent and anti-fungal agent too! Yuca also helps purify and detox the blood… and at the same time helps with gout. And Yuca is full of antioxidants that help clean up free radicals helping you to stay young.

Yuca also helps with hypoglycemia and diabetes too, helping to lower blood glucose and stabilizing it, and Yuca can lower cholesterol levels.Yuca can also be used for glaucoma and Yuca is full of Vitamin C and lots of great minerals plus it also contains protein, potassium, magnesium, iron, and zinc. Yuca can be found in capsules, and as the root, plant, flowers, and juice, that are all-edible… but everything has to be cooked, and the roots taste great!

Garlic contains allicin which in double blind studies has been shown to cut your probability of coming down with a cold or flu by 50%. But allicin must be taken in it’s natural form as fresh garlic. Garlic has been shown to lower blood pressure and manage blood pressure for long periods of time. Garlic has the ability to help you use iron more effectively, so if you are low in iron and taking an iron supplement also take Garlic.

Garlic can help prevent the accumulation of fats in the liver. Garlic increases bile flow from the gallbladder thus it helps to prevent gallstones and congestion of the liver. Garlic has been shown to heal away plaques in arteries… and thus help to improve cardiovascular disease, stokes, and other diseases. Garlic has lots of research showing that it can lower bad cholesterol (LDL Cholesterol) and triglycerides. Also helps to increase good cholesterol (HDL Cholesterol) and thus helps to prevent heart attacks and stokes.

If a person takes fresh raw garlic and cuts it up and swallows it with honey, it can help sooth away your gas, stomachache, and indigestion. Garlic helps to break up clots in the body, and thus helps to prevent cardiovascular events. If a person comes down with tonsillitis often eating fresh garlic can help heal the infection.

Garlic contains germanium which in studies slows the progression of cancer, and in mice has been able to prevent cancer completely. Studies show that people who eat raw garlic daily have a much lower probability of coming down with stomach and colon cancer.

Studies have shown that garlic pills and capsules don’t work well, it needs to be fresh garlic with that pungent odor.
