“Anti-inflammatory, Gluten Free, and Probiotic Building”
Here is a simple vegan organic cornbread recipe that’s a meal all by itself. With the healing power of corn, black beans, and veggies, this full spectrum meal will do the body good and it’s super tasty. Plus this cornbread is very filling and makes a great lunch or dinner… and this meal can be made ahead of time and served later.
Ingredients:
4 – Cups of Organic Yellow Cornmeal
2 – Cups of Organic Gluten Free Flour
4 – Teaspoons of Organic Baking Powder
8 – Tablespoons of Organic Honey or Agave Nectar
4 – Teaspoons of Organic White Vinegar
12 – Oz of Cooked Organic White Beans – Mashed
12 – Oz of Cooked Organic Black Beans
2 – Cups of Organic Green Chilies Chopped or Mild Jalapeños—or hot if you like it spicy
1 – Large Organic Red Bell Pepper – Chopped
3 – Teaspoons of Organic Low Sodium Taco Seasoning
8 – Oz of Grated Organic Dairy Free Monterey Jack Cheese – Make Sure it Does Not Contain Casein.
3 – Cups of Filtered Water
And a Dash of Salt
Take a large mixing bowl and add all the ingredients together and mix well. Then pour into a 9 x 9 x 3 baking pan. And place the pan in a preheated 375 degree oven for 45 minutes or until the top becomes nice and brown and a toothpick comes out clean.
Let cool, slice, and serve with a green salad and perhaps some salsa on the side.
Serves 12 to 16 people depending upon the serving size.
