“Organic Garlicky Green Banana Salad”

“Low Glycemic Index and Great for Gastric Ulcers”  

This vegan dish is very popular in the Caribbean, Central America, and South America and it’s called “Escabeche”. And it’s very tasty and it’s one of my favorite dishes. Full of flavor this dish contains lots of probiotic building food for all the good bacteria in our gut. And this salad will provide lots of vital energy and get up and go. Everyone will love this dish and it’s very quick and simple to make, and this salad can be served hot or cold. And this marinated salad is great for parties because it can be made ahead of time and allowed to marinate in the frig.

Ingredients:

8 – Large Green Organic Bananas – Sliced them into one inch slices and boiled for 30 minutes in garlic water and salt. And organic plantains can also be used for this dish, but green bananas are a little bit creamier in texture. To cook the bananas peel them and then boil them in garlic and salt water for 30 minutes. Remember cooked bananas don’t become soft when cooked, they are still firm.

2 – Large Organic Yellow Onions Sliced into Rounds – We Want Nice Rounds of Sautéed Onions.

2 – Cups of Organic Carrots – Shredded into Long Strips using a Potato Peeler – Boiled Until Tender

1 – Large Head of Organic Garlic – All the Cloves Chopped

1 – Tablespoon of Garlic Powder – Use this for Boiling the Bananas

2 or 3 – Tablespoons of Organic Olive Oil – Use the Least Amount Possible

2 – Bunches of Green Onions Sliced

4 – Cups of Organic Green Olives with Capers and Pimento in Vinegar and use the vinegar too – These olives can be found at any organic market.

Salt and Pepper to Taste

(Optional) Hot Pepper Sauce— if you like it spicy

Take onion slices and the garlic and sauté them in 3 the olive oil. Then add the cooked green bananas, cooked carrots, olives, capers, and pimento with vinegar and mix well and then after cooling add the green onions. Salt and pepper to taste, and add the hot sauce if you like it spicy and serve this either hot or cold. I like it cold but my wife loves this dish hot. And the longer this salad marinates in the frig the more flavor it develops— Wonderful.

And this marinated salad will keep well in the frig for 4 or 5 days.

Serves 8 to 10 people
