“Organic Mexican Soup”

“A Great Way to Use Up that Leftover Salad”

So you made a large salad and no one ate much of it, and now you have a big salad that’s going to waste. Well that salad doesn’t have go to waste because we can make a tasty and nutritious soup from that salad… and that’s a lot better than throwing it out. And this wonderful Mexican soup is super easy to make and only take 30 minutes from start to finish.

5 – Cups of Organic Left Over Salad— including beans of any kind, lettuce, radishes, tomato bits, onion, cucumber, olives, and anything else that’s normally in a salad— Chopped

1 – Cup of Organic Swiss Chard if needed — Chopped

1 – Large Organic Yellow Onion – Chopped

3 – Salt Free Organic Veggie Bouillon Cubes

1 – Tablespoon of Organic Chili Powder

4 – Cloves of Organic Garlic – Minced

10 – Oz of Organic Enchiladas Sauce

4 – Oz of Organic Taco Sauce

1 – Large Organic Avocado

Enough Filtered Water to Cover

Salt and Pepper to Taste

Place everything in a large pot and simmer until all the veggies are tender.

Salt and pepper to taste, let cool slightly, and garnish with a slice of avocado.

Serves 10 to 12 people.

I really don’t believe in throwing out good food, we can find another use for it.

And Avocado Seed can be sliced and roast in the oven too! Remember Avocado Seed is slightly bitter so make sure to add it to smoothies and sauces that cover up the bitter flavor.

I like to slice off a fresh piece of avocado seed and dip it in honey and eat it that way.
