“Organic Sweet Potato Pudding”

“This Pudding has a Low Glycemic Index Making it Perfect for Diabetics”

Here is a wonderful vegan holiday treat that’s vert simple to make and it’s full of wonderful nutrition. This pudding only takes about a 1/2 hour to get together and will keep well in the frig for days. And this dessert works great for parties, plus this sweet treat has a low glycemic index making it perfect for diabetics.

Ingredients:

3 – Large Organic Sweet Potatoes Boiled

2 – Large Organic Cooked Tapioca Roots also known as Yuca Root (sometimes spelled with one or two “C’s”) and Cassava Root or 2 Cups of Tapioca Flour can be used instead—Yuca Roots can be found at Asian or Latin American Markets — tapioca root is a good thickening agent and can be used to replace eggs.

1 – Cup of Organic Agave Nectar or Honey– but honey will have a higher glycemic index

2 – Teaspoons of Organic Baking Powder

2 – Teaspoons of Organic Vinegar

1/2 – Teaspoon of Salt

2 – Tablespoons of Organic Ground Cinnamon

Enough Filtered Water to Make a Thick Batter

Mash together the cooked sweet potatoes and yuca root with the agave nectar, honey, vinegar, salt, cinnamon, baking powder, and see how thick it becomes. Then add enough water to make a medium batter. Then pour the batter into a blender and blend on high until everything is blended into a beautiful homogeneous batter.

Next pour the batter into a 9x9x3 inch baking pan and top with a little extra ground cinnamon powder. Pop the pan into a preheated 350-degree oven for 60 minutes or until the top starts to brown slightly and a toothpick comes out clean. I’ve made this in a very large size before and it can take up to 90 minutes of baking to have a toothpick come out clean in a larger size.

Let cool and then place the pan in the frig for a few hours, it’s easier to slice this pudding when it’s cold.

Serves 12 to 15 people

Health Benefits of Organic Sweet Potatoes

Now that the Holiday Season is upon us perhaps we need to be reminded of the great health benefits of sweet potatoes. Sweet potatoes are full of B-6 Vitamins which is great for helping reduce inflammation and which also helps reduce arthritis, cardiovascular problems, and also strokes. Sweet Potatoes are also filled with iron that helps our blood transport more oxygen and powers up our muscles, boosts up our immune system and also helps with stress.

And most people don’t get enough magnesium which helps us feel relaxed and is important in the integrity of your blood vessels, heart, nerves, and your bones and sweet potatoes are a good source of magnesium. And potassium is great for anyone with electrolyte problems and irregular heart beats and sweet potatoes are a good source of potassium. And sweet potatoes are full of Vitamin D which is great for enhancing our mood and giving us a boost of energy and building a strong organ system. Plus sweet potatoes are full of beta-carotene which an excellent antioxidant that helps to prevent and repair DNA damage.

Important – And sweet potatoes break down into glucose much slower than other starches when boiled thus making them great for diabetics, but when baked sweet potatoes have a much higher glycemic index.

Boil them, mash them, grill them, make long strings out of them with a peeler and make sweet potato pasta… sweet potatoes are amazing and very nutritious.
