“Organic Cranberry Coconut Cake”

“Low Glycemic Index, No Added Sugar, and Gluten Free” 

Here is a wonderful vegan cake recipe that I made for the holidays that’s sure to please everyone. This cake is sweet yet contains no added sugar, plus it’s super tasty and full of amazing nutrition. Everyone will love this cake and feel good about having another slice and this cake is super moist and luscious.

Ingredients:

6 – Cups of Cooked Organic Yams – Boil, Peeled, and Mashed

2 – Cups of Organic Egg Replacement Powder—This can be found at any health food store or tapioca root flour can be used.

3 – Cups of Organic Freshly Grated Coconut

4 – Cups of Organic Whole Fresh Cranberries

2/3 – Cup of Organic Agave Nectar or Honey—if the agave nectar is added this cake has a very low glycemic index.

1 – Tablespoon of Organic Vanilla Extract

2 – Teaspoons of Organic Baking Powder

2 – Teaspoons of Organic White Vinegar

2 – Large Very Ripe Organic Bananas – Mashed

1 – Teaspoon of Ground Organic Cinnamon

Enough Filtered Water to Make the Blender Work

Take the yams, egg replacement powder, coconut, agave nectar, vanilla, baking powder, vinegar, bananas, cinnamon, and place them in a mixing bowl and mix well. Then take that mixture and place it in a powerful blender with enough water to make the blender work and blend until smooth.

Next, pour the batter into a 9x9x3 inch baking pan and add the fresh whole cranberries. Mix the cranberries around so they are well dispersed in the batter. Then place the pan in a preheated 350-degree oven for 60 minutes or until the sides of the cake start to turn a bit dark. Now remove the pan from the oven and let cool completely and then cover with foil and place in the frig overnight. This cake is easier to cut when it’s cold.

Serves 16 people

Health Benefits of Organic Cranberries

Cranberries have all kinds of great health benefits and lots of us have cranberries during the holidays. Cranberries are well known for preventing urinary tract infection, bladder infections, kidney infections, and preventing bladder stone production by acidifying your urine.

Cranberries have been studied extensively and now science knows that cranberries are a powerful anti-cancer food that helps to prevent prostate, breast, lung, and even colon cancer. Cranberries contain lots of amazing antioxidants (Phenolic Compounds) that include hydroxycinnamic acids, cinnamic acids, cyanidins, quercertin, and more amazing antioxidants. And cranberries boost up our immune system helping to prevent colds and flues.

Cranberries have been shown to lower blood pressure, and lower cholesterol especially LDL or bad cholesterol, and boost up our good cholesterol or HDL cholesterol.

Cranberries are good for the GI tract by preventing helicobacter pylori bacteria from sticking to the lining of our stomach and creating ulcers. Plus eating cranberries is important for maintaining good bacteria in our gut thus boosting our immune system. Cranberries also help to prevent gum disease and also help to prevent macular degeneration and cataracts.
