“Organic Coconut, Peanut, Buckwheat Balls”

“High in Protein with Lots of Antioxidants”

Feel like something sweet? Here is a very healthy sweet treat that kids and adults alike will enjoy. And these little sweet jewels are full of great nutrition, low in fat, high in protein, and contains lots of antioxidants. And they are simple and easy to make… and it’s made with Mesquite Powder which has a very low glycemic index of only 28.


4 – Cups of Cooked Organic Buckwheat… with a glycemic index of 44 and that is considered low glycemic index.

2 – Cups of Organic Mesquite Powder Sweetener… this sweetener has a glycemic index of only 28 – very low.

8 – Oz of Organic Peanut Butter – Pour off the oil and thus you have a very low-fat peanut butter… or fat-free peanut butter powder which is super low in fat can be used. And if you use the peanut butter powder then add 1/2 cup of water to make it sticky. Peanuts have a glycemic index of 14.

1/2 – Teaspoon of Organic Stevia Powder or you could add 1/4 cup of organic honey instead

1/2 – Teaspoon of Salt

2 – Cups of Earthly Choice – Organic SuperFood Blend… I found this product at Costco and it contains lots of antioxidants including quinoa flakes, cacao nibs, milled flax seeds, chia seeds, hemp seeds, coconut flakes, and some buckwheat. But if you can’t find this product use cacao nibs and cooked quinoa and it will work fine.

1 – Cup of Organic Shredded Coconut… this is just a little for the coating.

Take everything and mix it all together into 1/2 inch balls and then roll the balls in a little bit of shredded coconut and refrigerate for an hour or two and they are ready to eat.

Makes a great snack and they freeze well for later use.

Serves 20 people

You can also make desserts like this with the same mixture… spread on a corn tortilla and topped wth fruit – Yummy

Health Benefits of Organic Buckwheat

Lots of Protein – Buckwheat contains up to 18% protein which is pretty amazing and it contains 18 different amino acids including some essential and none essential proteins. And it also contains tryptophan, lysine, valine, and other important proteins. In fact, Buckwheat has more protein than rice, wheat, millet, corn, and most of the other cereals— other than quinoa which has slightly more.

Great for Vegans and Vegetarians – Buckwheat contains lots of protein making it important for those who are vegans and vegetarians… and should be consumed weekly.

Lowers Cholesterol – Buckwheat contains lots of powerful antioxidants which help to lower cholesterol especially LDL or bad cholesterol.

Powerful Antioxidants – Buckwheat contains rutin which is a very powerful antioxidant which helps to prevent cardiovascular disease, strokes, and cancer. And it also helps to slow the aging process and prevent and repair DNA damage. And buckwheat also contains glutathione S-transferase, quercetin, and glutathione peroxidase antioxidants.

Low Glycemic Index – Buckwheat has a low glycemic index of 45 which is great for diabetics.

Helps with Diabetes – Buckwheat lowers glucose by almost 20%. And buckwheat also seems to work like insulin in the body and helps our cells to become more sensitive to glucose which is important for anyone with insulin resistance. And buckwheat also contains D-chiro inositol which is important for insulin resistance.

Lots of Magnesium – Buckwheat contains lots of magnesium and manganese which also helps with diabetes. Studies done with thousands of people showed that magnesium rich foods lowered the chances of coming down with diabetes by up to 30%.

Prevents Cardiovascular Disease – Buckwheat also contains lignans which help creates more probiotics in our gut and thus helping to prevent disease in general and protect against heart failure.

Resistant Starches – Buckwheat along with green bananas and some other plants contain resistant starches which help with the growth of probiotic bacteria.
