Here is my version of what we call “Asopoa” or Rice Soup here in Puerto Rico. This is wonderfully warm and filling meal which is great those subzero days in the midwest and eastern states right now. Plus this soup is full of the goodness of organic carrots and spinach… and this meal is super inexpensive to make. Another great Whole-Foods Plant-Based recipe.
3 – Cups of Cooked Organic Brown Rice
1 – Large Organic Yellow Onion – Chopped
10 – Cloves of Organic Garlic – Minced
8 – Large Organic Carrots – Sliced
5 – Cups of Any Kind of Green like Organic Spinach – Chopped
8 – Medium Organic Potatoes – Chopped
6 – Organic Veggie Bouillon Cubes – Salt-Free
1 – Teaspoon of Organic Turmeric Powder for that Nice Yellow Color – you will not taste the turmeric
1 – Tablespoon of Organic Garlic Powder
Enough Filtered Water to Cover Everything
Salt and Pepper to Taste
In a large soup pot take the chopped and minced garlic and onion and cook them in a tablespoon or two of water until translucent. You don’t need oil if you do this quickly and with high heat. I have a big cast iron soup pot that I use for this that works great but any pot will work fine.
Next add the rest of the ingredients plus the filtered water and bring everything to a boil and simmer until everything is tender.
Then salt and pepper to taste— Let cool slightly and serve – That’s It!
Serves 12 people or 4 really hungry guys.
Health Benefits of Organic Carrots
Carrots are just about as popular as potatoes when it comes to consumption throughout the world. I think potatoes are just a little more popular… but not much!
Very Healthy – Charlotte Gerson talks about the fact that carrot juice has almost the nutritional value of mothers milk. In fact, some children who have a hard time with milk have been put on carrots juice and thrive. But these children need that first mother’s milk to attain colostrum which is important.
Eyes – Everyone knows that carrots can help you see better. Carrots are full of beta-carotene, vitamin A, and help to prevent macular degeneration and increase night vision and help to prevent cataracts… and they also contain lutein, zeaxanthin, and xanthophyll for good vision.
Liver Cleans – Carrots are a good detoxing agent for the liver and the body in general and also contain lots of fiber that helps to reduce bile and fats in the liver… thus helping to prevent fatty liver disease. The fiber in carrots combines with bile and thus helps to remove bile from the liver.
Immune Boosting Agent – Carrots contain many very powerful immune boosting agent that helps to prevent disease.
Cholesterol – Carrots lower cholesterol and thus help to prevent cardiovascular events and strokes. The fiber in carrots binds to LDL cholesterol and thus lowers your cholesterol… and boost your good cholesterol.
Fiber – Carrots also help to increase fiber in the diet and thus promote the growth of probiotic bacteria… and thus boosting your immune system.
Strokes – Carrots have been studied at Harvard University shows that if you eat more than 6 or 7 carrots a week you prevent strokes.
Anti-inflammatory – Carrots contain powerful anti-inflammatory agents that rival all the over the counter drugs like aspirin and other painkillers. Thus carrots help with arthritis, joint pain, swelling, redness, tenderness and are a great natural painkiller.
Acne – Carrots detox the body and thus help with acne and other skin diseases.
Heart Disease – Carrots help prevent cardiovascular disease because of great fiber and powerful antioxidants that help to prevent vascular events (heart attacks).
Antioxidants – Carrots are full of powerful antioxidants that slow the aging process, help to repair DNA damage and create good health by preventing cardiovascular disease, strokes, and cancer. Carrots contain Vitamin A, C, and E which are powerful antioxidants.
Skin – Antibiotic – Anti-fungal – Being full of great vitamins and antioxidants grated carrots make a natural face mask when mixed with honey – very healing. Also taking cooked carrots or grated carrots and using them on cuts and scrapes works well to prevent infections.
And because carrots have so much Vitamin A (almost 210 % of our daily needs of Vitamin A) they help to prevent dry skin, wrinkles, psoriasis, eczema and bring elasticity back to aging skin.
Diuretic – Carrots are a natural diuretic that helps to prevent water retention.
Cancer and Fungus – Carrots contain falcarindiol and falcarinol which are antifungal compounds which also help to protect against cancer. Mice fed carrots have 1/3 fewer cancers than control mice. Carrots help to prevent prostate cancer, colon cancer, lung cancer, and even leukemia.
In fact, a study in 2011 showed that carrots killed leukemia cells and prevented spread the disease. In Japan, it has been shown that the more carrots they eat… the less colon cancer they have.
Contain – Carrots contain Vitamins A and C which are powerful healing agents, Vitamin K for clotting, iron, and copper for anemia, B – Vitamins for good mood and vitality, potassium for regulating blood pressure, Vitamin E for great looking skin and fertility.
Calcium and phosphorus for strong bones, zinc for boosting up your immunity, magnesium for preventing osteoporosis, and manganese and molybdenum for enzyme production.
Lycopene is found in red carrots (like that found in tomatoes) is great for the prostate, and anthocyanin which is found in purple carrots is another powerful antioxidant.
Alkaline Food – Carrots are a great alkaline food thus helping to stave off diseases by balancing pH… and also prevent ulcers and GI irritations.
Phytonutrients – Carrots contain powerful phytonutrients that prevent disease. Compounds such as coumaric acid, caffeic acid, and ferulic acid which are powerful anticancer compounds.
Anthocyanidins – Carrots also contain malvidins and cyanidins which help to prevent cancer, strokes, and cardiovascular disease.
Tooth Decay – Carrots contain minerals and vitamins that promote healthy gums and create alkaline saliva which prevents tooth decay.
Slows Aging – Carrots are full of antioxidants that slow the aging process.
Lungs – Carrots are great for asthma, bronchitis, emphysema, and other inflammatory problems of the lungs. Carrots help with mucus and congestion, sinus problems, and phlegm in the nose and throat.
Weight Loss – Because carrots contain lots of fiber they make a great weight loss food.
Types of Carrots – Carrots come in different colors- carrots can be red, white, orange, purple, and yellow… there are more than 100 different types of carrots.
