Here is a great recipe of mine that I’ve made on many occasions and people love this dish. And this Puerto Rican potato salad can be served either hot or cold. Made with the goodness of potatoes and radishes this recipe will fill you up and keep you going. And this recipe is super fast and easy to make. Another Delicious Whole-Foods Plant-Based Recipe.
20 – Medium Organic Golden Potatoes – Cut into Large Pieces… Any kind of potato will work. Cooked in salt water with a little bit of extra salt.
20 – Organic Red Radishes – Finely Shredded
18 – Organic Green Onions with Tops – Chopped
2 – Cups of Organic Italian Parsley – Chopped
1/2 – Cup of Organic Cappers
2 – Cups of Organic Green Pitted Olives
3 – Cups of Whole-Foods Plant Based Italian Dressing – (Oil Free) – to make this dressing take 12 oz of organic white beans, 1 cup of filtered water, 4 tablespoons of organic lemon juice, 12 cloves of organic garlic, 3 tablespoons of organic Italian seasoning, and blend until smooth and place in a container for later use… add more water if needed… and salt and pepper to taste. This salad dressing is great to have around the house.
2 – Cups of Extra Filtered Water… if needed
1 – Organic Lemon – Use the Zest and the Lemon Juice
Salt and Pepper to Taste
(Optional) If you want this recipe a little spicey… add a little bit of hot sauce
Take the cooked potatoes and add all the ingredients, mix well, and place in a large serving dish and place in the frig… or this salad can be served hot… in fact it’s great hot.
Serve as a side dish or as a meal with a nice green salad.

The Best Way to Cook Organic Potatoes – Baking is the best way to cook potatoes. When boiled most of the nutrients of potatoes go down the drain with the water. Also steaming is another good way to cook potatoes with very little loss of nutrients. So skip the frying, and try a baked potato with a little bit of organic olive oil on it, or my favorite dipping a baked potato into balsamic vinegar… yummy.
I really don’t fry anything, so when it’s possible to convert any fried recipe into something that is lower in calories, and full of nutrition… I always do. Frying destroys most of the nutrients and vitamins in everything. Thus the nutrient value of fried potatoes is very low but the fat content is very high. Try roasting, baking, steaming, and other methods of cooking for nutrient-rich organic potatoes which will do your body good.
Eat Potatoes in Moderation – Organic Potatoes contain lots if good carbs so they will pack the pounds if consumed in large amounts. So eat organic potatoes in moderation and enjoy their health benefits without gaining weight.
