This great tasting high protein avocado sandwich is a powerhouse for the body. Full of lots of protein that will do the body good. And the goodness of avocados which are full of great nutrients for an active lifestyle. This sandwich is super easy to make and it makes a great snack, lunch, and even dinner. Another Whole-Foods Plant-Based Recipe.
1 – Large Organic Avocado – or 3 small avocados – Mashed
1 – Medium Organic Tomato – Chopped and Dried to remove excess liquid
1/2 – Cup of Organic Frozen or Fresh Cooked Peas – Mashed – They are high in protein and you really don’t taste the peas.
1 – Cup of Organic Plant-Based Protein – Cut into small cubes – they take on the flavor of the rest of the sandwich.
1/2 – Cup of Organic Red Onion – Chopped
1/2 – Cup of Organic Nutritional Yeast Powder
1 – Tablespoon of Organic Lemon Juice – perks up the flavor and keeps everything nice looking.
3 – Tablespoons of Organic Vegan Cheddar Cheese – Make sure it does not have casein in it.
Salt and Pepper to Taste
2 – Pieces of Organic Whole Grain, Vegan, Gluten Free Bread
Organic Lettuce and Tomato Slice for the Top of the Sandwich
Take the mashed avocado and add tomatoes, peas, plant-based protein, lemon juice, nutritional yeast, red onion, salt, vegan cheese, pepper, and nutritional yeast and lovingly mix together without breaking things up.
Spread on the bread add the lettuce and tomato on top and the top bit of bread.
There you have it!
This recipe makes enough filling for about 6 to 7 sandwiches
