Here is a super easy and really tasty Mexican recipe that will feed a crowd and everyone will love it. I made this for a family gathering and it was a hit. This recipe contains all the goodness of rice and beans, fresh avocados, refried beans, tomatoes and more. And this wonderful recipe works well for a party or a large family… it’s a full meal in itself. It’s full of antioxidants, good Omega 3 oils, it’s high in protein and contains lots of fiber for growing good probiotics. Another Whole-Foods Plant-Based Recipe.
20 – Oz of Organic Cooked Pink or Pinto Beans – Cooked with 2 Cups of Mexican Salsa – You can also use canned organic beans in a pinch and add the salsa.
6 – Cups of Cooked Organic Brown Rice – Cook this rice with a 1 teaspoon of turmeric powder, salt, pepper and 6 Organic Bouillon Veggie Salt-Free Cubes
6 – Large Organic Tomatoes – Chopped
5 – Large Organic Avocados or 8 Small Organic Avocados
72 – Oz of Organic Fat-Free Refried Beans
2 – Large Organic Onions – Chopped
12 – Cloves of Organic Garlic Cloves – Minced
1 – 12 oz Package of Organic Frozen Peas – Mashed
2 – Tablespoons of Organic Garlic Powder
Salt and Pepper to Taste
Take the refried beans and smooth them out in a 9 x 16-inch baking pan. Then mash the avocados and add the chopped onions, minced garlic, mashed peas, plus the garlic powder. Smooth out the avocado layer over the refried beans. Next, add a large layer of chopped tomatoes, and finally, add the rice and beans on top.
This is a meal in itself or it can be a great dip for chips – just take organic corn tortilla’s and cut them up and place them in the oven at 425-degrees until they true slightly brown and they are ready as chips for this amazing dish.
I love this dish and enjoy the leftovers.
This dish will keep in the frig for 3 or 4 days.
And this recipe can be made ahead for a party and kept in the fridge.
Serves 20 people or 7 really hungry guys.
