Where it Grows – Sugar Maple trees grow all over the world in colder climates in the US, Canada, Japan, Asia, North Africa, and Europe. Most maple syrup, in fact, 80% comes from Canada because they have lots of open space and lots of sugar maple trees and very cold climate which they need.
Other Names – The Latin name for Sugar Maple Tree is Acer saccharum.
Buy Only Pure Maple Syrup – Pure Maple Syrup should only contain pure maple syrup without any additives or preservatives.
Removing Tree Sap for Syrup – In the winter time the trees are tapped and the water moving in the under bark layer is removed and boiled down to make maple syrup.
Low Glycemic Index – The glycemic index of maple syrup is 54 and honey is 55 and cane sugar is at 65. And any food that is 55 and under is considered a low glycemic index food. But it’s at the high end of low… so use Maple Syrup in moderation… it’s still sugar. And studies in Canada show that Maple Syrup can slow down the digestion and breakdown of carbohydrates which is impressive.
High in Antioxidants – Maple Syrup compared to sugar contains lots of good antioxidants which are important.
