Low Glycemic Index – The glycemic index of maple syrup is 54 and honey is 55 and cane sugar is at 65. And any food that is 55 and under is considered a low glycemic index food. But it’s at the high end of low… so use Maple Syrup in moderation… it’s still sugar.
