Here are some great ways to use plant-based products instead of eggs for baking. That way we can stay healthy and enjoy the foods we really love at the same time.
Organic Aquafaba – Aquafaba is the liquid that comes from all kinds of beans when they are cooked. And adding 3 to 4 oz of this liquid to any baking recipe will work instead of eggs. Use aquafaba from white beans, cannellini beans, and garbanzo beans they don’t give your baked goods any residual flavor from the beans. And if you take the beans and blended them and add them to your recipe they also work well for adding moisture instead of adding oil to your recipes and added fiber in your baked goods without adding flavor.
Organic Tapioca Flour – Tapioca Flour or Cassava Flour as it’s called in other countries works well as an egg replacement. Use 1/2 cup per recipe.
Organic Rice Flour – There is brown rice flour which works well and there is glutinous rice flour which is even stickier that you can find at Asian Markets that also works well. Use from a 1/2 to 2/3 rds cup per average recipe.
Organic Xanthan Gum – Xanthan Gum is the dead cells of a certain type of bacteria and it works great for thickening just about anything and works great as an egg replacement. You don’t have to use much, usually 1/4 to 1/3 teaspoon per average recipe… you will have to experiment with this to see the amount that works for you.
Organic Arrow Root – Good old Arrow Root powder is made from a root which is very sticky. And it works well as an egg replacement and you don’t need much, usually about 1 – Tablespoon per average recipe.
Organic Chia Seeds – Chia Seeds can be soaked in water to create Aqua Faba just like beans. And adding 3 or 4 oz of this liquid to any baking recipe works great instead of eggs.
Organic Tofu – Silken Tofu also works wonders as an egg replacement. Add 1/4 to 1/2 cup per average baking recipe.
Organic Soy Protein Powder – Organic Soy Protein Powder is somewhat sticky and works well as an egg replacement for your baked goods. Add 1/4 cup mixed with a little water to your average recipe.
Organic Flax Seeds – Flax Seeds can be soaked in water to create Aqua Faba just like beans. And adding 3 or 4 oz of this liquid to any baking recipe will work instead of eggs.
Organic Bananas – Organic Bananas are always a good old standby as a great egg replacement. Add 2 ripe bananas per average baking recipe.
Organic Apple Sauce – Organic Apple Sauce is another good egg replacement that works well and most people have on hand all the time. Add 1/2 cup per average baking recipe.
Organic Corn Starch – Organic Corn Starch has been around for a long time and works well as an egg replacement. Use one full teaspoon per average baking recipe. I try to limit this egg replacement as much as possible… it does contain a lot of calories.
Organic Garbanzo Bean Flour – Organic Garbanzo Bean flour is great to have around the house it has lots of uses. And it also works well as an important egg replacement. Add 1/2 cup per average baking recipe mixed with a little bit of water.
Organic Tahini – Tahini is another egg replacement that some people use that is made from sesame seeds. I have not found it to be as sticky and hold things together as well as some of the others egg replacements but it does work. Add 1/3 to 1/2 cup per average baking recipe.
On the average, I use aquafaba from beans, tapioca flour, and rice flour as my favorite all-around baking egg replacements. But sometimes I use the others for certain types of baked goods.
Plus I don’t bake as much as I did years ago because I want to eat whole-foods in the way of fruits and veggies as much as possible.
