Rhubarb has been around for thousands of years in China and 400 years ago it was first used in the UK, and it has lots of wonderful health benefits. Rhubarb prevents Alzheimer’s disease, helps with weight loss, It’s great for digestion, lowers bad cholesterol and increases good cholesterol, prevents cancer, prevents osteoporosis, and helps with skin problems. Plus Rhubarb also is great for the eyes, helps with menopause, and so much more.
Where it Grows – Rhubarb grows in the US, Europe, Asia, Arabia, China, Japan, Russia, and anywhere that has a moderate climate. And it will even grow in tropical areas.
Other Names – Also called Rheum rhabarbarum and it’s part of the Polygonaceae family.
Parts Used – The red stakes are used. The green leaves are poisonous.
Freezing – The red stakes can be cut into pieces and place in a plastic bag and remove the air and it will keep for a very long time in the freezer.
Taste – The taste is kind of like a tart green apple and many people add sweeteners to it to make it even more delectable. Strawberry Rhubarb pie is wonderful.
Stalks can be Cooked or Eaten Raw – The stalks are great if cut up and cooked and used in jams, jellies, pies, cobblers, and other desserts. And the raw stalks can be cut up and dipped in honey and they are really tasty. The stalks can also be used in savory dishes such as soups, stews, and other spicy recipes.
Making Rhubarb Tea – Cut up the raw stalks and place them in a cup and add boiling water and steep for 15 minutes and drink… Wonderful!
Lowers Blood Sugar – Rhubarb contains stilbenoid compounds which help to lower blood glucose which makes it great for diabetics.
Great for Weight Loss – Rhubarb only contains 21 calories for every 100 grams of Rhubarb. And it contains agents that increase our metabolism so we lose weight.
Rich in Fiber – Rhubarb contains lots of good fiber that creates a good environment for the growth of probiotic bacteria in our gut thus boosting up our immune system.
Helps Prevent Heart Disease – The more fiber a food has the more it lowers cholesterol and thus helps to prevent cardiovascular disease.
Helps with Cholesterol – Because Rhubarb contains lots of fiber it also helps to lower cholesterol and it also increases good cholesterol to help prevent heart attacks, strokes, and even cancer.
Great for Anemia – Rhubarb contains copper and iron and thus helps to prevent anemia and move oxygen through the body.

Natural Hair Dye – To make your hair a light brown color take 3 tablespoons of Rhubarb Root powder and bring it to a boil for 15 minutes, strain, and let sit overnight. Then rise your hair in this and you will have light brown hair.
Reduces Stress – Rhubarb has long been known to help with stress and tension.
Prevents Osteoporosis – Rhubarb contains lots of Vitamin K which plays a role in building up bone density and preventing osteoporosis.
Great for Eye Health – Rhubarb contains lutein and zeaxanthin for preventing macular degeneration.
Lots of Antioxidants – Rhubarb contains lots of Betacarotene, Vitamin C, and other flavonoids that help to prevent DNA damage and repair DNA damage and thus prevent disease.

Side Effects – There are no side effects if taken in moderation. But those who are pregnant, nursing, or young children should not take rhubarb. Rhubarb stalks do contain a very small amount of oxalic acid as with kidney beans and other foods. But if you are sensitive to oxalic acid then you should avoid this food.
Finding – Any supermarket will have fresh Rhubarb.
Recipes – Google “Rhubarb Recipes” and lots of wonderful ways to use this veggie will come up. It can be used in spirits, on fish, on pork, in soups, stews, jams, jellies, made into a chutney, cobbler, made into fruit leather, and lots of great ways to eat Rhubarb.
