“Heavenly Spicy Pumpkin Potato Soup”

“High in Antioxidants, Lowers Cholesterol, and Anti-Inflammatory” 

Here is a great recipe if you like a nice spicy soup that will give you lots of energy and has a wonderful flavor. Full of the powerful nutrition of pumpkin… this soup will do the body good. This soup contains lots of antioxidants, in fact, one cup of pumpkin contains 300 times our daily needs of Vitamin A which is a powerful antioxidant. This soup is also anti-inflammatory and lowers cholesterol… what more could you ask?

Heavenly Spicy Pumpkin Potato Soup


3 – Cups of Organic Pumpkin or Winter Squash – Cut into Medium Pieces — We leave the skin on its great fiber and it’s edible and tastes great 

3 – Cups of Organic Potatoes with the Skins on – Cut into Medium Pieces – could also use peeled Taro Root for a lower glycemic index. 

3 – Cups of Organic Cabbage – Sliced Thin 

2 – Large Organic Yellow Onions – Sliced 

8 – Cloves of Organic Garlic – Minced 

1 – Cup of Organic Brown Rice – Cooked 

2 – Cups of Yellow Squash – Chopped

1 – Teaspoon of Organic Turmeric Powder – For that nice yellow color 

1 – Teaspoon of Organic Caribbean Jerk Seasoning – You can get this in hot or mild version — And add more if you like it very spicy 

3 – Organic Veggie Low-Sodium Bouillon Cubes

1/2 – Teaspoon of Organic Black Pepper 

1/2 – Cup of Organic Kale – Chopped – Or any other green will work 

1/2 – Cup of Organic Tomatoes – Chopped 

Enough Filtered Water to Cover

Add salt according to your taste 

(Optional) – You could also add some organic garbanzo or white beans if you like 

In a large pot add the onions and garlic and a little water and cook until translucent. Then add everything else except the kale and tomatoes and cook until tender. Remover from the heat and let cool a bit and add the kale and tomatoes.  

Let cool and serve
