“Low in Calories, Anti-inflammatory, Lowers Blood Pressure, Contains Omega 3 Oils”
Here is a wonderful soup that will fill you up and keep you going without adding extra pounds. Full of the healing nutrients of summer squash this soup is great for dropping those few extra pounds. Plus this soup will lower blood pressure, helps heal cardiovascular disease, it’s anti-inflammatory and much more. And this soup is simple to make and can even be frozen for later use.
Another Whole-Foods Plant-Based Recipe
3 – Cups of Organic Yellow Squash – Made into little strips – some peelers do this
3 – Cups of Organic Green Onions – Chopped — The Greens and the White Part
1 – Cups of Organic Potato – Cut into Large Cubes – Cooked
1 – Cups of Organic Carrots – Chopped – Cooked
8 – Cloves of Organic Garlic Minced
4 – Organic Veggie Salt-Free Bouillon Cubes
Salt and Pepper to Taste
Enough Water to Cover Everything
Garnish – Chopped Greens of Any Kind – I used Purple Perilla here for a contrast
(Optional) – Hot Sauce if you like it spicy
Take the garlic and sauté it in a large pan with a little bit of water until translucent. Add the cooked potatoes, carrots, and bouillon cubes, and cover with filtered water and simmer for 10 more minutes. The and add the green onions and yellow squash strips and cook for 5 minutes… not too long… just until there is a color change in the squash and onion.
Let cool and serve
