“Gluten-Free, Sugar-Free, and Super Low Fat… But Very Moist”
Here is a luscious cake that’s super easy to make. This cake has become my favorite cake and it might become your favorite cake. Full of lots of healing nutrients that lower blood pressure, lower cholesterol, boost up our immune system, and it’s anti-inflammatory. Everyone is sure to love this cake and everyone will come back for seconds… and it’s sugar-free, gluten-free, and super low-fat… but very moist.

Another Whole-Foods Plant-Based Recipe
Ingredients:
3 – Cups of Organic Oatmeal Flour
2 – Cups of Organic Pumpkin – Cut into Large Pieces
1 – Cup of Organic Pineapple – Cut into Medium Pieces
2 – Cups of Organic Banana – As Green as Possible – Or you can also use ripe plantains like I did in this cake… works great and they are super tasty.
1 – Teaspoon of Organic Baking Powder
1 – Teaspoon of Organic Baking Soda
1/3 – Teaspoon of Salt
1/2 – Cup of Organic Tapioca Flour
2 – Teaspoons of Organic Ground Cinnamon
2 – Teaspoons of Tahini
5 – Tablespoons of Organic Honey
1 – Teaspoon of “NOW” Brand Organic Stevia — you can use other brands but the amount may vary.
Enough Filtered Water to Make a Medium Batter
(Optional) – Fresh or Dried Goji Berries to Garnish or any other type of berry.
Take the oatmeal flour, tapioca flour, and add the stevia, 2 tablespoons of honey, the tahini, cinnamon, baking powder, baking soda, salt, and water and mix into a medium batter.
Use a 9 x 9 inch baking pan and add the fruit and pour the batter over the top. Bake in a preheated 425 degrees oven until the top turns golden brown which is about 75 minutes.
Remove from the oven and let cool and drizzle the other 3 tablespoons of honey that are left on top the cake… and serve with goji berries on top… or any other type of fresh berries.
Serves 12 people
