“Mouthwatering Potato and Pumpkin Stew”

“Anti-inflammatory, Lowers Cholesterol, Anti-aging, Antibacterial, Prevents Cancer, Regulates Blood Sugar, Full of Omega 3 Oils, and More” 

Here is a mouthwatering fall stew that’s great tasting and full of lots of great nutrition. Full of Omega 3 oils, it’s anti-aging, antibacterial, High in protein, helps to prevent cancer, anti-inflammatory, lowers cholesterol, helps to regulate blood sugar, full of tryptophan for a good nights rest and so much more. And this recipe is super easy to make. I gave some of this stew to some neighbors and they loved it… and so did my wife. 

Another Whole-Foods Plant-Based Recipe

“Mouthwatering Potato and Pumpkin Stew” – “Anti-inflammatory, Lowers Cholesterol, Anti-aging, Antibacterial, Prevents Cancer, Regulates Blood Sugar, Full of Omega 3 Oils, and More”

Ingredients:

6 – Cups of Organic Potato Cut into Large Pieces, or you can use Name’ which is sometimes called Cinnamon Vine Tuber which is great for hormone balance, or Taro Root which has a super low glycemic index… all will taste great. 

5 – Cups of Organic Pumpkin Cut into Large Pieces, you don’t even have to remove the skin it becomes tender in this stew and it is full of nutrition. 

2 – Cups of Organic Sun Dried Tomatoes – Cut in Strips 

1 – Cup of Organic Green Bell Pepper – Chopped 

12 – Oz of Organic Cooked Kidney Beans 

 1 – Large Organic Yellow or White Onion – Chopped 

8 – Cloves of Organic Garlic – Minced 

2 – Tablespoons of Organic Tomato Paste 

2 – Tablespoons of Mrs. Dash Seasoning 

1- Teaspoon of Organic Turmeric Powder — Gives the Stew a Nice Yellow Color 

1 – Teaspoon of Fresh or Dried Organic Oregano 

1 – Teaspoon of Fresh or Dried Organic Thyme 

1 – Teaspoon of Fresh or Dried Organic Tarragon 

4 – Tablespoons of Organic Fresh or Dried Cilantro 

1/2 – Organic Plantain – Chopped Fine and Boiled – Then add this to the stew to thicken the stew 

3 – Organic Salt-Free Veggie Bouillon Cubes

Salt and Pepper to Taste 

Enough Filtered Water to Cover Everything

(Optional) – Hot Sauce if you like it hot 

In a large pot add the onions and garlic and a little bit of water and sauté in the water until translucent. Next, add everything else except the beans and plantain. When everything is tender add the beans and the plantains and cook until the broth becomes slightly thickened. Don’t overcook this stew or the pumpkin will fall apart.

Let cool and serve

Serves 12 people 

Served with a nice green salad this is a full spectrum meal
