“Delicious Mexican Corn Masa Casserole”

Here is a wonderful and super tasty Mexican Casserole made with masa corn flour. This quick and simple casserole is sure to please your whole family and it’s super filling. And it’s full of nutrients that heal the body and keep a person healthy. It helps to prevent cancer, lower blood sugar and blood pressure, it’s high in protein, helps to prevent cancer, helps to build probiotic or good bacteria in our gut and thus boost up our immune system. And it also slows the aging process with lots of antioxidants and it’s a powerful anti-inflammatory dish that helps with aches and pains. And corn and beans create a full spectrum food that helps to sustain large populations for long periods of time. And adding other veggies makes corn a very well rounded and nutritious addition to any meal.

“Delicious Mexican Corn Masa Casserole” – “Anti-Inflammatory, Helps to Prevent Cancer, High in Protein, Helps to Lower Cholesterol, Lowers Blood Sugar and Stabilizes Blood Sugar, Lowers Blood Pressure, Slows the Aging Process and More”

 

Ingredients:

2 – Cups of Organic Yellow Masa Harina Corn Flour

3 – Teaspoons of Organic Salt-Free Mexican Seasoning 

3 – Cups of Cooked Organic Garbanzo Beans — Add 2 Teaspoons of Mexican Seasoning 

1 1/2 – Cup of Organic Sun-dried Tomatoes – Sliced Thin 

12 – Oz of Organic Black Olives – Sliced 

4 – Cups of Organic Zucchini – Chopped 

1 – Large Organic Semi-Ripe Plantain – Sliced 

1 – Large Organic Red Bell Pepper – Chopped 

1 – Teaspoon of Mrs. Dash Seasoning for the Zucchini 

Salt and Pepper to Taste 

A Little Bit of Filtered Water 

Take the masa corn flour and add a teaspoon of salt and 1 teaspoon of the Mexican Seasoning and mix well with a little bit of water to make a firm dough. Allow this to sit at room temperature for 45 minutes. 

In a 9 x 15-inch Loaf Pan lay down a layer of the masa dough. 

Then a layer of garbanzo beans mixed with 2 teaspoons of Mexican Seasoning. 

Next, add the sun-dried tomatoes. 

Then, add the black olives. 

Next, add the zucchini mixed with the Mrs. Dash Seasoning and another layer of masa dough on top. 

Then slice the plantain and arrange on top and sprinkle on the chopped red bell pepper and also sprinkle the top layer with a bit of black pepper. 

You don’t need to add any water to this casserole the zucchini will supply all the liquid needed. 

Place in a preheated 425-Degree oven for 1 hour.. or until the sides of the casserole start to bubble. 

Remove from the oven and allow to cool and slice. 

Serves 12 people

Served with a nice salad this is a full spectrum meal.
