“Eggplant Relish Salad” – A Vegan Recipe

Here is a great party salad that’s very healthy… and will keep you coming back for more because it tastes great!

Eggplant Relish Salad

Eggplant Relish Salad

I made this salad last night for some friends welcome home party.

Ingredients:

4 – Large organic eggplants sliced, then sprayed with a little organic oil of your choice… and baked in the oven until golden brown and then chopped.

2 – Large red organic red bell peppers. (Roasted, peeled, and then chopped)

3 – 6 inch pieces of fresh organic hearts of palm sliced into 1/2 inch pieces. (You can substitute marinaded artichoke hearts if you like)

3 – Cups of organic black olives – sliced.

1/2 – Pound of organic mushrooms – chopped. (Save a few sliced mushrooms for the garnish of the salad)

2 – Tablespoons of capers.

1 – Tablespoon of garlic powder. (You can use fresh garlic if you like)

3 – Tablespoon of your favorite seasoning – (Italian, Cajun, Curry Powder, or any other seasoning.) 

Salt and pepper to taste.

1 – Large head of organic romaine lettuce – chopped

1/2 – Pound of organic kale – chopped.

2 – Large organic tomatoes sliced – (for the garnish arranged on top of the salad)

Arrange lettuce and kale in a large bowl and then the sliced tomatoes and mushrooms.

Spray the eggplant slices with a little organic oil and bake them, then chopped them up. Then add bell pepper, hearts of palm or artichoke hearts, black olives, mushrooms, capers, garlic powder, seasoning, salt and pepper. And spray all of these with a little spray organic oil of your choice to make sure the seasoning sticks.

Toss the eggplant relish and adorn the top of the lettuce and kale salad.

There you have it… simple, very tasty, and very healthy.

Kale is full of amazing nutrition, eggplant is great for preventing cancer, and tomatoes and bell peppers have lots of great healing abilities.
