Marrow also called Cucurbita looks like a zucchini squash but it’s actually a different veggie all together and it’s very healthy. Marrow is grown in the US, Mexico, Central America, and Great Britain, and other countries around the world. It has a slightly thicker skin than that of zucchini thus it stores for longer periods of time, and but it’s very tender and tasty. Remember this is not bone marrow, this is a nice green veggie.
Lots of Iron – Marrow contains lots of iron making it great for those who suffer from anemia. And the iron in marrow is bioavailable making it easy to assimilate into cells.
Lots of Calcium – Marrow also contains a good source of plant based calcium for strong bones. Thus marrow is great for preventing osteoporosis, making it especially important for those who are elderly.
Lots of Protein – Marrow is high in protein compared to other veggies making it great for plant based diets.
Prevents Kidney Stones – Marrow also helps to prevent the formation of kidney stones. And anyone who has ever passed a kidney stone knows just how painful that can be.
Lowers Cholesterol – Marrow helps to lower LDL or bad cholesterol thus making it very important for cardiovascular health and for the prevention of heart attacks.

Edible Leaves – Marrow leaves are also edible – boil for one minute (they turn to mush if cooked too long), drain the water, then pat dry, chop, and then sauté with olive oil, salt, pepper, onion, lots of minced garlic and they are very tasty… and some people add parmesan cheese.
Great Taste – The taste is similar to that of summer squash.
Cooking – Marrow can be used in casseroles, grilled, roasted, steamed, used raw in salads, stuffed, fried, used in soups, stews, made into chutney and jams, and just about anything a person could think of. Google “Recipes for cooking vegetable marrow” and lots of great recipes will come up. Some recipes are marrow and sweet corn, marrow with spinach and lentils, and morrow with basil and green peas.
Easy to Grow – Morrow comes in many different varieties and it’s very easy to grow. The vines spreads out like pumpkin vines and they are very prolific and grow all year long. They love the summer months, but also grow during the fall and through mild winters. Marrow can grow to be the size of regular zucchini and up to 20 to 30 pounds.
Finding – Lots of Super Markets sell marrow, if they don’t, ask them to carry marrow so you can enjoy them. And the seeds can be bought on-line and they can also be found on Amazon, and perhaps at your local garden center.
Keeps Longer – Zucchini and other summer squash tends to go bad quickly but marrow stores for long periods of time like pumpkins and winter squash. Making marrow great for storing in the cellar or in a cool dry place for long periods of time.
